These stay in rotation on our weekly brunch schedule, in between my biscuits, French toast, and other treats.
I give in to the box pancakes on occasion. They’re fast & easy, but nothing compared to these ones.
These are pretty easy to whip up too though.
First, in a bowl whisk together 1 cup of flour, 1/4 cup sugar, 2 tspn baking powder, 1/4 tspn baking soda, and 1/4 tspn salt. In another bowl whisk together 3 tbsp melted butter, 1/2 cup buttermilk, 2 tspn vanilla extract, and 1 large egg.
Mix the wet ingredients into the dry ingredients, and thoroughly whisk together until you have a smooth batter. I sprinkle a little cinnamon and nutmeg into the batter, and mix it some more.
Finally pour them on a medium-low skillet, cook, flip, serve, and enjoy.
Fluffy scratch-made Pancakes

- 1 cup flour all purpose or bread flour
- 1/4 cup sugar
- 2 tspn baking powder
- 1/4 tspn baking soda
- 1/4 tspn salt
- 1/2 cup buttermilk
- 3 tbsp melted butter
- 2 tspn vanilla extract
- 1 large egg
- a sprinkle of cinnamon and nutmeg
Instructions
