Homemade Spanish Rice

Ingredients

  • 1 cup white long grain rice
  • 2 cups chicken broth
  • 1/2 can Rotel 5 ounces
  • 1 tbsp paprika
  • 1 tbsp Sazón
  • salt/pepper to taste

Instructions

  • First things first, you will need 2 cups of chicken broth. This recipe is for one cup of rice (which is a nice bit). If you need to double it for a larger dish, it still works out great. But only add another 1/4 cup of broth per extra cup of rice. Everything else is fine doubled.
  • If you don't have chicken broth, use bouillon cubes. They're cheap, quick and make great broth in minutes. One cube per one cup of water/broth is all it takes. I like to boil it uncovered so I can see what's going on. It only takes a few minutes because you just wanna boil until the cubes are dissolved (stirring occasionally).
  • In a sauce pot mix your chicken broth, 1/2 can Rotel with green chilis, 1 tbsp paprika, 1 tbsp Sazón, 1 cup of white long grain rice, and salt/pepper to your taste.
  • Bring to a boil, then reduce heat to low. Simmer covered for 15 minutes.
  • When your timer goes off, remove from heat and the liquid should all be absorbed. Fluff gently with a fork and enjoy!
