First things first, you will need 2 cups of chicken broth. This recipe is for one cup of rice (which is a nice bit). If you need to double it for a larger dish, it still works out great. But only add another 1/4 cup of broth per extra cup of rice. Everything else is fine doubled.
If you don't have chicken broth, use bouillon cubes. They're cheap, quick and make great broth in minutes. One cube per one cup of water/broth is all it takes. I like to boil it uncovered so I can see what's going on. It only takes a few minutes because you just wanna boil until the cubes are dissolved (stirring occasionally).
In a sauce pot mix your chicken broth, 1/2 can Rotel with green chilis, 1 tbsp paprika, 1 tbsp Sazón, 1 cup of white long grain rice, and salt/pepper to your taste.
Bring to a boil, then reduce heat to low. Simmer covered for 15 minutes.
When your timer goes off, remove from heat and the liquid should all be absorbed. Fluff gently with a fork and enjoy!
