Easy Crockpot Potato Soup Recipe

I was looking through my recipes and could not believe my lack of a potato soup recipe on here.

I have a few different versions of potato soup, creamy and hearty, thin and brothy, and even one with thick peppered bacon. But this is the easiest version to start with. I used the bone and scraps from a leftover honey spiral ham I had from Easter.

It is the best flavor, sweet and savory!

If you don’t have leftover ham bone scraps, end cut bacon pieces is another solid choice. Just chop them up a little first. But they’ll break down while they cook too.

You can usually find them at your local grocery if you ask. They are nice fatty chunks of delicious high blood pressure lol. But you want 2-3 pounds of meat in there. I mean I do anyway.

Start out by preheating your crockpot on high while you prepare everything. I put my ham bone and scraps in there first along with a cup or two of water.

Then slice and dice one medium sweet onion, and mince 4 cloves of garlic. Dump those on top of your ham in the crockpot.

Next we get the potatoes ready. I love red potatoes. I think they taste better and are less starchy than other potatoes. I used about 3 pounds, sliced and diced also. Add them in on top of everything.

Be sure to give them a little rinse after you peel them though.

Now fill the crockpot with just enough water to cover the potatoes.

Depending on your crockpot size you may have to adjust portions. The great thing about this recipe is you don’t have to be exact, it will still taste amazing.

If your crockpot is smaller, use 1/2 onion, 2-3 cloves of garlic, and maybe only 2 pounds of potatoes. Just do what works best for you. You will still be pleased!

I topped the soup with 1 packet of Sazón (1 tbsp.), and some cracked black pepper to help balance out the sweetness of the ham.

Give it a nice stir and let it go covered for 10 hours on high.

Just let it go until those potatoes are nice and tender. Honestly, the longer this goes the better it gets.

I always make large batches. My crockpot is a 6-7 quart cooker I believe.

Once the 10 hours are up I like to scoop some of the bones out and mash those potatoes just a bit. Add in 2 cups of milk, give it a stir, and then let it go for about 3 more hours on low.

This is one of those recipes I start either early in the morning or the night before. Maci and me eat for days on this deliciousness!

Go ahead and fix you a bowl, top it with cheese, a few crumbled crackers, a little more black pepper, or whatever your flavor is.
